Hello friends, did you all have a great weekend? I hope so. Can you believe it's the first Monday of August already? So it's time for my Monthly Sweet Tooth post and this recipe is once again super easy, quick and tasty. Here in South Africa we call these flapjacks but I know in America they are often called pancakes, well whatever you call them, they are definitely tasty little treats and perfect to whip up for an impromptu brunch or breakfast.
I had fun putting together this shoot for you and thanks to rhubarb room I had some beautiful props to use! Rhubarb Room is a gorgeous little café, gift and clothing boutique in Cape Town, definitely pop in when you get a chance.
Flapjacks with Summer Berries
1 egg
25ml sugar
165ml milk
pinch of salt
250ml cake flour
20ml baking powder
12.5ml oil
* Beat the egg. Then add sugar and milk to the egg and beat
* Add the salt, flour and baking powder and mix
* Add the oil and beat until smooth
* (If you find the mixture a bit thick, you can add a bit more milk)
* Pour a little oil into a frying pan and put on a high heat

* Drop large spoonfuls of the batter into the hot frying pan
* When you start to see little bubbles appearing on the flapjacks, flip them over
* Cook until slightly golden
Enjoy as you wish, with berries and cream or syrup and butter, the list is endless.
